One day in Thessaloniki is tight, but the city is on your side: it's compact, flat and walkable, and its highlights cluster into a single walkable loop from the seafront up to the old town. Morning: waterfront and Roman city

Walk the seafront to Aristotelous Square, then head inland to the Roman core: the Arch of Galerius (Kamara) and the magnificent Rotunda with its gold early-Christian mosaics. Midday: markets and a cheap, great lunch

By late morning, eat like a local. Duck into the Modiano and Kapani markets, a couple of blocks back from Aristotelous, and grab lunch on the move: a warm bougatsa, a charcoal souvlaki or gyros, and a syrup-soaked trigono for dessert — all for a few euros. It's the fastest way to taste why Thessaloniki is Greece's food capital without losing an hour to a sit-down meal.

Afternoon: Ano Poli and the view

Spend the afternoon up in Ano Poli, the Upper Town that survived the 1917 fire. Ride a bus or taxi up to save the climb, then wander downhill through Ottoman lanes and tiny Byzantine churches to the city walls and the Trigonion Tower, where the whole city falls away to the gulf. If you'd rather stay cool, swap this for the Archaeological or Byzantine Culture museum instead — both are world-class and a blessing on a hot day.

Evening: sunset, dinner and drinks

If you only have a few hours between flights, it's still worth leaving the airport. The express bus (Line 01X, €2) runs to the centre in around 40–45 minutes; budget roughly an hour each way and bank on at least three hours in the city. With limited time, do the waterfront–White Tower–Aristotelous–Rotunda loop and one market bougatsa, and skip Ano Poli.
